Avocado Shrimp Salad
Cook shrimp in a pan with olive oil, salt, and pepper
Cut up shrimp and mix with diced avocado, cherry tomatoes, and red onion
Add fresh cilantro, minced garlic, lime juice, and pepper

Bake at 350 for 20 minutes until bubbly on top, garnish with green onions and serve with celery and carrots!
Mexican Caviar Dip
Cut up and mix together:
Tomatoes
Avocado
Green bell pepper
Red onion
Frozen corn
Black eyed peas
Black beans
Cilantro
Add olive oil, red wine vinegar, lime juice, honey, minced garlic, oregano, salt, & pepper to the mix and serve with whole grain chips or celery!
Bourbon Apple Glazed Turkey Meatballs
Meatball Ingredients
1 lb. ground turkey
1 egg
1 grated apple
¼ c apple cider
¼ c panko
2 tsp dijon mustard
Garlic powder, onion powder, salt, pepper
Green onions
Glaze Ingredients
1 c apple cider
¼ c low sodium soy sauce
2 tbsp local maple syrup
2 tbsp bourbon
½ tsp ginger
Pinch of cinnamon
2 tsp cornstarch mixed with tsp water
Directions
Mix meatball ingredients and bake meatballs at 425 for 12-15 minutes
Whisk glaze ingredients together in a saucepan (except for the cornstarch) and bring to a boil. Once at a boil, slowly pour in cornstarch mix. Constantly whisk. Lower heat to medium and whisk until glaze is thick. Add meatballs to the saucepan for a few minutes.
Serve by adding sliced green onions!
Smoked Salmon Pinwheels
Ingredients
Spinach wraps
4 oz low fat cream cheese
Fresh dill
Chives
Garlic powder
Spinach
Smoked salmon
Directions
Combine cream cheese, dill, chives, and garlic powder in a bowl
Spread mix on a wrap leaving half and inch around the edges
Lay spinach on top of cream cheese, then add smoked salmon
Roll wrap and tuck in the ends as you roll. Wrap really tight!
Use a knife to cut off the edges of the wrap, then cut wrap into ½ inch rounds
Serve with a toothpick!
Cajun Shrimp Guacamole Bites
Ingredients
Sweet potatoes sliced- olive oil, salt
Shrimp- paprika, cumin, salt, chili powder, olive oil
Guacamole- avocado, cilantro, lime juice, red wine vinegar, red pepper flakes, salt
Directions
Toss sweet potatoes in olive oil, salt, and bake at 425 for 10 minutes. Flip potato slices over and bake for 5-7 minutes.
Prepare guacamole
Cook shrimp over medium heat with olive oil and seasonings
Serve sweet potato bites by topping with a dollop of guacamole and a shrimp, garnish with fresh cilantro.
Buffalo Cauliflower Bites
Ingredients
Fresh cauliflower florets
Organic buffalo sauce
Directions
Mix hot sauce, salt, pepper in a bowl
Mix sauce with cauliflower florets
Bake at 450 for 20 minutes
Serve with homemade ranch
Zucchini Parm Tots
Ingredients
1 cup shredded zucchini
⅓ c bread crumbs
1 egg
¼ c parmesan cheese
Directions
Shred zucchini with a veggie grater. Squeeze any moisture out of shredded zucchini with a paper towel
Add zucchini to a bowl and mix with an egg, parmesan cheese, and breadcrumbs.
Take some of the shredded zucchini and squeeze in your hand to compress it into a tater tot shape
Put on a baking sheet with parchment paper and bake at 400 for 15-20 minutes until golden brown.
Bell Pepper Nacho Bites
Ingredients
Bell peppers
Ground turkey
Salsa
Chili powder, cumin, pepper, salt
Low fat shredded cheddar

Slice peppers into 4 pieces where the pepper dips down
